GRAPPA DI CHIANTI CLASSICO
A limited number of bottles are produced, 1500 bottles a year. Young spirit who’s aromatic profile has not been altered by ageing in wood.

OLIO EXTRA VERGINE DI OLIVA DEL CHIANTI CLASSICO D.O.P.
The olive varieties grown on the estate are:50% frantoio, 20% moraiolo, 20% leccino, 10% pendolino.
During the month of November the olives from the 6,850 trees are harvested by hand.
The olives harvested are stored in small crates and pressed within 24 hours of harvesting. The olives are pressed using hammers and the oil is extracted cold using a three-phase centrifuge. Only after fining using the natural decantation process is the oil bottled, after gentle filtering through cotton.
Every year an average amount of 40 to 50 hectolitres of oil is produced. (The oil’s rich content of polyphenols guarantees perfect conservation for 14-18 months.)
VIN SANTO DEL CHIANTI CLASSICO OCCHIO DI PERNICE D.O.C.
Grape variety: 100% Sangiovese
The Vinsanto is a sweet wine, exclusive to the Chianti region and has been bottled at Lilliano since the early 60's. Nowdays produced with red grapes takes the name of Vinsanto Occhio di Pernice.
The Vinsanto di Lilliano is produced in small quantities (12 - 15 HL) only in the best years of grape quality.
Vinification: Grapes hand picked and hung and dried from rafters in warm and well ventilated area. Gently pressed in late December.
Maturing/ageing phases, times and containers used: Storage in small 2,25hl ‘caratelli’ barrels for 3 years.
